Throw it in Fried Rice

Simple fried rice recipe that makes eating your veggies tasty and easy. This is a clean-out-your-fridge style meal!

YIELDS: 4 servings

PREP TIME: 10 min

INGREDIENTS

  • 2 cups of cooked rice (frozen or leftover)
  • 1 tbsp of oil
  • 3/4 cup of fresh or frozen mixed vegetables
  • 1-2 stems of green onions (scallions)
  • 1 tbsp of soy sauce or tamari, to taste

OPTIONAL INGREDIENTS
You can make this recipe with any cooked grain, not just rice. For some protein, you can add tofu, peas, or even cashews.

RECIPE

  1. Heat up pan on high heat with the oil.
  2. Carefully add your cooked rice to the pan and stir, breaking up any clumps.
  3. Then add your veggies of choice and mix everything well, sauteeing for about 5 minutes, until the vegetables are cooked through.
  4. Add the soy sauce over top and give a quick stir to distribute the sauce evenly.
  5. Top with green onion, enjoy!

  • This dish is perfect to use up the vegetables in your fridge, or you can use frozen mixed vegetables like a stir-fry blend.
