INGREDIENTS

• 2 tablespoons neutral oil
• 1 medium onion, small diced
• 1 green bell pepper, small diced
• 2 celery stalks, small diced
• 2 (28 oz) cans baked beans
o 1 can undrained
o 1 can drained
• 1 cup BBQ sauce
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon smoked paprika
• Salt, to taste
• Black pepper, to taste
• ¼ Cup Brown Sugar
• 1 Tablespoon Dijon Mustard

Optional Ingredients
• A pinch of cayenne pepper for a subtle kick of heat
• Add a pound of plant based grounds and sausage for a heartier dish


RECIPE

1. Preheat the oven to 400°F.
2. Heat the neutral oil in a large sauté pan over medium heat.
3. Add the onion, bell pepper, and celery. Sauté for 5–7 minutes, or until softened and fragrant.
4. In a large mixing bowl, combine the sautéed vegetables with one undrained can of baked beans, one drained can of baked beans, Dijon mustard, brown sugar and the BBQ sauce.
5. Season with the garlic powder, onion powder, smoked paprika, salt, and black pepper. If using, add a pinch of cayenne pepper. Stir until evenly combined.
6. Transfer the bean mixture to a lightly greased casserole dish and spread into an even layer.
7. Bake uncovered for 30–45 minutes, or until the beans are hot and bubbling and the top is lightly caramelized with crisp edges.
8. Remove from the oven and allow the beans to rest for 5 minutes before serving.

Alternate Cooking Method (Stovetop)

  1. After combining all ingredients, simmer over low heat for 20–25 minutes, stirring occasionally until thickened and the vegetables are tender.

  • Draining one can of beans while leaving the other undrained creates the perfect balance of thick, hearty beans and rich sauce.
  • The longer the beans bake, the more caramelized and flavorful the top becomes.
