BBQ Jackfruit Salad

INGREDIENTS

  • Chopped kale
  • Grilled onions
  • Fresh jackfruit
  • Parsley

Carolina gold sauce ingredients:

  • 1 tbsp yellow mustard – any brand that you like
  • 1 tbsp brown cane sugar or agave
  • 1 tsp apple cider vinegar
  • 1 tbsp coconut aminos
  • Black pepper – freshly cracked is best
  • Garlic powder
  • Onion powder
  • Sea salt
  • Cayenne pepper (for spice)

BBQ sauce recipe (add all ingredients to taste):

  • All the ingredients used for the Carolina gold sauce
  • 1 tbsp ketchup
  • 2 tbsp brown cane sugar
  • 1 tsp lemon juice
  • 1 tsp garlic pepper


RECIPE

Carolina gold sauce:

First, make 2 servings of the Carolina gold sauce by combining all the ingredients and simmering in a small pot on low heat until slightly thick. If you like a thicker sauce, add a starch of your choice.

Homemade BBQ sauce:

Use the second serving of Carolina gold sauce you made and add other ingredients for the BBQ sauce to it. Stir until the color is blended well, and add seasoning to taste.

Cutting the jackfruit:

  1. Apply oil to your knife and hands to minimize stickiness or wear gloves.
  2. Cut off both ends of the jackfruit.
  3. Use the knife to slice the jackfruit in half lengthwise. You can also cut it into quarters.
  4. Remove the core. If you garden, you can add this part to your garden compost.
  5. Use your hands or a knife to extract the pods and remove the seeds.
  6. Chop the jackfruit into thinner shreds.
  7. Our jackfruit into a bowl and mix in with your homemade bbq sauce.
  8. Chop and grill one red or yellow onion.
  9. Place the jackfruit on a bed of fresh-cut kale, then layer with the grilled onions.
  10. Drizzle your homemade Caroline gold sauce on top and sprinkle parsley seasoning on top.
