Carrot Salad

This dish is not your typical salad. It is light and fresh and doesn’t have any of the heavy dressing we are used to. With just a few simple ingredients, the dish feels just as good as it tastes. The sunflower seeds give the dish a crunch and a kick for you to enjoy.

INGREDIENTS

  • 5-6 large carrots
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon agave or sweetener of your choice
  • ¼ teaspoon salt
  • 2 tablespoons – chopped fresh parsley or chopped fresh mint
  • ¼ cup raisins, optional
  • 2 tablespoons sunflower seeds


RECIPE

  1. Peel and grate the carrots into a large bowl. Or use pre-shredded carrots.
  2. In a small bowl or medium jar, mix lemon juice, olive oil, agave, and salt.
  3. Pour the dressing over the carrots and toss well.
  4. Stir in raisins, chopped herbs, and sunflower seeds.
  5. Let salad sit for 5-10 minutes before serving.
  6. Toss again. Serve and Enjoy!
